Ginger Honey Kale Salad

Kale is the star of this dish for its nutritional benefits! Jazz it up with a delicious, natural and healthy dressing of Ginger and Honey. Enjoy it as-is, or top with feta/goat cheese. Another great option is adding protein like shrimp, chicken or salmon.

Ingredients:

• 2 tablespoons apple cider vinegar
•  1 ½ tablespoons orange juice
• 1 ½ teaspoons soy sauce
• 1 ½ teaspoons honey
• 1 ½ teaspoons grated fresh ginger
• 2 tablespoons olive oil

Directions:

Step 1: Whisk together vinegar, orange juice, soy sauce, ginger and honey. Slowly add the olive oil and whisk it until well mixed.

Step 2: Place kale in a large bowl. Drizzle the dressing on top of it and mix well with tongs. Use your hands to continue mixing and massaging the kale and dressing together, until softened, wilted and reduced in volume by about half.

Step 3: Top with feta or goat cheese. Serve and enjoy!
