Green Goddess Dip and Dressing

We loves our dips around here, especially if we can pass it as somewhat healthy. This Green Goddess dip is full of avocado, herbs, lemon, greek yogurt and just a little buttermilk for creaminess. You can blend it to create a thicker consistency for a dip or a smoother, thinner consistency for a salad dressing (kind of like that famous chain restaurant that serves bread, salads and soups!). Serve along side radishes, carrots, celery and your favorite vegetables or over your favorite greens.

Ingredients:

• 1 ripe avocado
• 1/2 cup buttermilk (*TIP: if you don’t have buttermilk on hand, simply combine 1/2 cup of milk with lemon juice until mixed well)
• 1/4 cup nonfat plain greek yogurt
• 2 tablespoons chopped fresh chives
• 2 tablespoons chopped fresh tarragon
• 3-4 cloves of garlic, peeled
• juice from 1/2 lemon
• 2 teaspoons anchovy paste
• salt and pepper, to taste
• vegetables or salad greens for serving

Instructions:

Combine all ingredients into a blender and puree until smooth. Serve as a dip along pita, vegetables or pretzels or on top of a salad as dressing.
