KETO Chocolate Peanut Butter Cookies

There are so many KETO recipes out there and it’s no exception when it comes to dessert. In this recipe we make soft Chocolate Peanut Butter cookies. It’s quick, easy and perfect if you’re looking for a KETO cookie recipe.

Ingredients:

• 1 1/2 cups peanut butter
• 1/2 cup peanuts
• 1 cup Erythritol
• 2 eggs
• 1 1/2 tsp vanilla extract
• 1/2 tsp sea salt
• 4 tsp cocoa powder

Directions:

Preheat oven to 350º F.

Crush peanuts. Tip: put peanuts in a plastic zip bag and use a glass bottle to crush.

In a medium mixing bowl, add peanut butter, Erythritol (or sweetener of your choice) and crushed peanuts. Use a mixer until ingredients are well blended.

In the same mixing bowl add the eggs, sea salt, cocoa powder and vanilla extract.

Roll into balls and place on greased baking sheet.

Bake for 10 minutes. Allow to cool for 5 minutes before serving.
