Molten Chocolate Lava Cakes

Ingredients:

• 1/2 cup ghee, or coconut oil
• 1 cup chocolate chips
• 4 egg yolks, plus 4 eggs
• 1/3 cup coconut sugar
• 2 teaspoons vanilla
• 1/4 teaspoons salt

Directions:

• Preheat oven to 420°
• Grease your 4-6 ramekins with ghee, or coconut oil
• Coat the entire inside of the ramekins with cocoa powder
• Add 1/2 cup ghee and chocolate chips to a pan and melt over the stove on medium heat
• Heat until smooth and creamy, then remove from heat
• In a large mixing bowl, add egg yolks, eggs, coconut sugar, vanilla and salt
• Mix together until light and fluffy
• Fold the melted chocolate and ghee mixture into the mixing bowl
• Pour the batter mixture into the ramekins and divide evenly, filling almost to the top
• Bake for 10-12 minutes, until the tops are dry but the insides still jiggle
• Let chill for 2 minutes
• Use a knife to loosen the edges from the ramekin
• Place a plate on top of the ramekins and use a towel or oven mitt to grab them
• Flip the plate quickly, loosening the cake from the ramekin
• Complete this dessert with your favorite toppings! We dusted ours with powdered sugar, raspberries and mint leaves
• Serve hot and enjoy
